Inspired by Cat stalking Goldilocks, Red Ribbon and every other Filipino bakery for their ube pastries. Ube (Filipino purple yam) and brown sugar shortbread with homemade taro chips for a great textural crunch. Like the Asian version of a sweet potato pie captured in a cookie.
